1 small onion, chopped
1/2 cup chopped red peppers
4 cups tightly packed torn fresh spinach
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
2 Tbsp. chopped fresh parsley
6 eggs, beaten
3/4 cup KRAFT Shredded Mozzarella Cheese

Heat oven to 375°F.

Cook onions and peppers in large skillet sprayed with cooking spray on medium heat 5 min. or until crisp-tender, stirring frequently. Remove from heat. Add spinach; mix lightly.

Prepare stuffing as directed on package. Add to spinach mixture along with the parsley and eggs; mix lightly.

Spoon into 8-inch square pan sprayed with cooking spray; top with cheese.

Bake 35 min. or until knife inserted in center comes out clean. Let stand 5 to 10 min. before cutting to serve.
