Original recipe yields 12 servings
1-3/4 cups flour
3/4 cup sugar
2 tsp. pumpkin pie spice
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
2 eggs
1 cup canned pumpkin
1/3 cup oil
1 tsp. vanilla
1 Granny Smith apple, finely chopped
1/4 cup chopped walnuts, toasted

Heat oven to 375ºF.

Combine first 6 ingredients in large bowl. Whisk eggs, pumpkin, dressing, oil and vanilla in medium bowl until blended. Add to flour mixture along with apples and nuts; stir just until moistened. (Batter will be lumpy.)

Spoon into 12 paper-lined muffin cups.

Bake 22 to 25 min. or until toothpick inserted in centers comes out clean. Cool in pan 5 min. Remove to wire rack; cool completely.
