Toss sweet potatoes, celery and parsley in large bowl.
Mix dressing, honey, lemon juice and ginger. Add to potato mixture; mix lightly. Cover.
Refrigerate several hours or until chilled.
Substitute 1/2 to 3/4 tsp. ground ginger for the grated fresh fresh ginger.
This side sish will brighten up any plate. The sweet potatoes are a good source of dietary fiber and are rich in both vitamin A and C.
