Beat egg whites and cream of tartar with mixer on high speed until stiff peaks form. Gradually beat in sugar, then coffee. Continue to beat 1 to 2 min. or until glossy. Blend in vanilla.
Spoon into pastry bag fitted with large round tip. Use to pipe egg white mixture into 22 mounds, 1 inch apart, on parchment-covered baking sheet.
Bake 2 to 2-1/2 hours or until cookies are firm. Transfer to wire rack; cool completely.
Melt chocolate as directed on package; drizzle over cookies.
For more decorative cookies, fit the pastry bag with a large star decorating tip before filling with the beaten egg white mixture.
Made with egg whites and just a drizzle of chocolate, these cookies can fit into a balanced diet.
