Add boiling water to gelatin mix in large bowl; stir 2 min. until completely dissolved. Stir in cold water and lemon juice.
Refrigerate 1-1/2 hours or until thickened.
Stir in fruit; pour into 8-inch square dish sprayed with cooking spray.
Refrigerate 3 hours or until firm.
Substitute seedless grapes or pitted sweet cherries for some or all of the melon balls.
Prepare using 2 pkg. (3 oz. each) gelatin.
