Stir boiling water into gelatin mix in large bowl 2 min. until completely dissolved. Stir in cold water and cinnamon. Refrigerate 1-1/2 hours or until thickened.
Meanwhile, whisk together Neufchatel, sugar, ginger and nutmeg in medium bowl with until smooth; stir in COOL WHIP LITE. Spread onto bottom of crust. Refrigerate until ready to use.
