Combine first 4 ingredients in large bowl. Gently stir in COOL WHIP and cherries.
Split each ladyfinger segment horizontally in half. Place bottom half of 1 ladyfinger segment, cut side up, on each of 8 dessert plates; top with pudding mixture. Cover with tops of ladyfinger segments, cut sides down.
Refrigerate 1 hour. Cut into individual sandwiches before serving.

Freeze filled ladyfingers 1 hour; cut with a saw motion using a serrated knife.
