Mix all ingredients except cucumbers in medium bowl until blended.
Add cucumbers; mix lightly.
Refrigerate 3 hours.
Prepare recipe as directed, except finely chop the cucumbers before mixing with the yogurt mixture. Serve as a dip with pita triangles.
Substitute 2 tsp. dried mint flakes for the chopped fresh mint.
Serve with grilled lamb, beef or chicken kabobs, or as a topping for gyros sandwiches.
This fat-free side salad is low in sodium, too. Cool as a cucumber, indeed.
