Haven't heard of Cookie Dough French Toast? Then we have a treat for you! Vanilla wafers and chocolate chips make for an extra-sweet baked version of Cookie Dough French Toast for breakfast this weekend.
Place 6 bread slices in single layer on bottom of 13x9-inch baking dish sprayed with cooking spray.
Beat Neufchatel, wafer crumbs, sugar and vanilla in medium bowl with mixer until blended. Stir in chocolate chips.
Divide Neufchatel mixture into 6 equal portions; flatten each into square matching size of bread slices. Place over bread slices in baking dish; cover with remaining bread slices to make 6 sandwiches.
Whisk eggs and milk until blended; pour over sandwiches.
Refrigerate 2 hours.
Heat oven to 350°F. Bake French toast 30 to 35 min. or until knife inserted in center comes out clean.
You will need to crush about 60 wafers to get the 2 cups wafer crumbs needed to prepare this delicious recipe. To easily make the crumbs, place the wafers in a resealable plastic bag. Crush with a mallet, rolling pin or bottom of skillet. Or, use the pulsing action of your food processor to process the wafers into the desired crumb size.
Start off your day with this quick-and-delicious entrée. Serve with a seasonal fruit salad to round out the meal.
This delicious French toast can be refrigerated up to 24 hours before baking as directed.
