Shape meat into 4 (1/4-inch-thick) patties. Place 1 cheese piece and peppers evenly onto center of each of 4 patties. Top with remaining patties; pinch edges together to seal.
Reserve 1 Tbsp. chipotle sauce. Broil patties, 6 inches from heat, 7 to 9 min. on each side or until done (160ºF), brushing occasionally with remaining sauce for the last few minutes.
Fill buns with burgers and reserved sauce.
Serve with a fresh fruit salad.
