Mix first 5 ingredients until blended. Pour over chicken, bell peppers and onions in shallow dish; turn to evenly coat chicken and vegetables with marinade mixture. Refrigerate 30 min. to marinate.
Meanwhile, combine remaining ingredients. Refrigerate until ready to serve.
Heat grill to medium heat. Remove chicken and vegetables from marinade; discard marinade. Thread chicken onto 4 skewers alternately with vegetables.
Grill kabobs 5 to 7 min. on each side or until chicken is done and vegetables are crisp-tender. Serve with cucumber mixture.
If using wooden skewers, soak skewers in water for 30 min. before using to assemble kabobs to prevent them from burning on the grill.
Serve with hot cooked rice sprinkled with additional chopped fresh cilantro and a small green salad tossed with your favorite KRAFT Dressing.
