1 lb. boneless beef sirloin steak, cut into strips
4 carrots, sliced
1 onion, chopped
1 green pepper, chopped
1/4 cup chopped dry roasted peanuts
1/4 cup chopped cilantro
2 cups hot cooked rice
Let's Make It
Mix salsa, steak sauce and sugar; set aside.
Heat oil in wok or large skillet on high heat. Add meat; cook 3 to 4 min. or until evenly browned, stirring frequently. Add vegetables; cook 3 min. or until crisp-tender.
Stir in salsa mixture; simmer on medium-low heat 2 min. Top with nuts and cilantro. Serve over rice.
For added heat, stir 1 tsp. crushed red pepper into stir-fry before topping with nuts and cilantro.
Substitute 2 cups frozen vegetables, such as a stir-fry mix or peas and carrots, for the cut-up fresh vegetables. Prepare salsa mixture and cook steak as directed. Add frozen vegetables along with salsa mixture, then simmer until heated through. Continue as directed.
You can buy steak and chicken already cut into strips at most grocery stores. Vegetables, such as broccoli, peppers and carrots, are also available pre-cut in bags in the produce section of many larger supermarkets.
