Making Pudding with Almond Milk and Other Plant-Based Milks

If you’re interested in incorporating more plant-based milks into your cooking and baking, pudding is a great place to start. Although many pudding recipes are dairy milk-based, did you know it’s possible to make pudding with almond milk or other plant-based milks? With JELL-O Puddings, you can replace the dairy milk with oat milk, soy milk, almond milk and other plant-based milk. It’s not a direct 1-to-1 ratio, so read on to learn how to make plant-based pudding with a variety of plant-based milks using both JELL-O Instant Pudding and JELL-O Cook & Serve Pudding.

How to Make Plant-Based Instant Pudding

The following instructions are intended only for use with JELL-O Instant Puddings. These instructions are not for use with JELL-O Cook & Serve pudding. For our JELL-O Cook & Serve directions, see the next section below. When making instant pudding with almond milk and other plant-based milks, take note of the following tips:

  • Puddings made with almond milk or other plant-based milks will have a different set, mouthfeel and flavor compared to pudding prepared with dairy milk.
  • The set will be soft to very soft and more of a spoonable texture—it will not have the same texture as JELL-O Pudding made with milk.
  • Based on our culinary experts’ test results, we recommend soy, almond and coconut milks as a milk replacement. Most other plant-based milks do not allow the pudding to set.
  • Use 1-1/2 cups of either soy, almond or coconut in place of 2 cups of milk in instant pudding.
  • If using in a dessert recipe, it is only suitable for desserts that are spoonable such as trifles, parfaits and other desserts with a similar texture.
  • Plant-based milks will not work in desserts where a firm texture is needed such as pudding pies, eclair cakes or striped delight (square layered desserts). We do not recommend using plant-based milks for these types of desserts.

How to Make Plant-Based JELL-O Cook & Serve Pudding

While only a few types of milk work for JELL-O Instant Pudding, there are more options to use for JELL-O Cook & Serve Puddings. Follow these instructions only for JELL-O Cook & Serve Puddings:

  • Puddings will have a different set, mouthfeel and flavor compared to pudding prepared with dairy milk.
  • Refrigerated and shelf-stable plant-based milks have their own distinct instructions. Reference the correct chart below.
  • Set is also different for using refrigerated or shelf-stable plant-based milk, so be sure you follow the right chart to achieve the setting consistency you want.
  • Chocolate pudding has its own unique instructions. Reference the chocolate-specific chart to prepare Chocolate Cook & Serve Pudding.
  • Our culinary experts recommend using 1-1/2 cups of either refrigerated oat milk or almond milk to prepare all JELL-O Cook & Serve Puddings.
