There is nothing quite like the taste of a good steak fresh off the grill. That goes without saying. But if there are times when lighting up the grill outside just isn’t practical, or you prefer not to have char on your steak, you’ll want to learn how to cook steak in the oven. Here are our step-by-step instructions for how to cook steak in the oven.
Learning how to cook steak in the oven starts with selecting the right cut of meat. Look for a steak that is at least one inch thick. If possible, choose a cut that is well-marbled throughout. This will help to keep your oven-baked steak nice and juicy. Ribeye is a great cut of beef to cook in to oven.
Make sure that your oven has reached 400°F before you begin the baking process. This will avoid prolonged exposure of your meat to heat and ensure a juicy steak.
Once the oven is up to temperature, it’s time to prepare your meat. First, pat the steak dry with a paper towel. Excess moisture on the surface of the steak can halt or delay the browning process.
There are a number of different ways to season your oven-baked steak, and the best way to determine what you like is to experiment. You can keep it simple and rub salt and pepper into both sides of the steak, or you can spice it up (literally)! If you are using a marinade or cooking a steak in the oven with sufficient marbling, you won’t need to add oil to the skillet for browning. If you are using a dry seasoning and your steak is not heavily marbled, heat a cast-iron skillet or an ovenproof pan for 3 minutes over high heat then add 1 to 2 teaspoons of your preferred oil to the pan. Neutral oils like canola oil or grapeseed oil allow the flavor of the oven-baked steak to come through fully, but olive oil and butter work as well. You want the surface of the pan to be very hot in order to sear the outside of the steak promptly without cooking the inside much.
Place your steak into the heated oil gingerly with meat tongs to avoid any splatter, then leave the steak alone. Allow the steak to sit for 2 to 3 minutes or until it develops a rich, dark color from the caramelization process. Once the first side has sufficiently browned, flip the steak over with your tongs. Allow the opposite side to brown for 1 to 2 minutes.
Place your entire skillet or ovenproof pan into the oven uncovered. Bake 8 to 10 minutes or until steak is medium doneness (160°F). The timing will depend on the thickness of your cut of meat, so be sure to use a meat thermometer to determine when your steak is finished and sufficiently oven-baked. Insert the thermometer into the center of the steak.
Once your oven-baked steak has reached the desired temperature, remove your steak from the skillet and let it stand for approximately 7 to 10 minutes before serving. During cooking, the outer layers of the steak contract. This pushes all the juices to the center of the steak. When you allow the steak to sit for a few minutes, the outer layers relax and the juices become more evenly distributed. Cover the steak loosely with foil during this period to retain the heat.
