Roasting a spaghetti squash produces a tender, rather than mushy, result since the juices collect on the pan instead of the squash. Here’s how to make a spaghetti squash in the oven:

What you’ll need:

  • 1 spaghetti squash
  • 1 tablespoon olive oil
  • Black ground pepper
  • Parmesan cheese
  • Chef’s knife
  • Ice cream scoop

How to prepare:

  1. Preheat your oven to 400°F.
  2. Start by cutting the squash in half, lengthwise. Spaghetti squash has a very hard outer shell so to soften it up, microwave it for a minute or two. Then, use a chef’s knife to cut through the flesh. Avoid cutting through the squash stem as it could damage your knife.
  3. Use an ice cream scoop or a regular table spoon to easily remove the seeds. Once the squash is free of seeds, drizzle one tablespoon of olive oil over the squash and season it with your favorite seasonings.
  4. Place the squash cut-side down on a baking sheet* and roast it about 45-50 minutes, or until its’ tender.
  5. Cool it for a 3-5 minutes and then, using a fork, scrape the flesh to create long strands.
  6. Top the squash with ground black pepper and parmesan cheese.

For a quick and easy side dish or dinner, turn a hard spaghetti squash into a bowl of tender noodles with your microwave. Here’s how:

What you’ll need:

  • 1 spaghetti squash
  • A fork or sharp knife
  • Chef’s knife
  • Ice cream scoop
  • Seasonings of choice

How to prepare:

  1. Pierce your spaghetti squash several times with a fork or sharp knife to allow steam to escape the squash while it cooks in the microwave.
  2. Microwave on HIGH for 10 minutes or just until squash is softened, turning after 5 minutes. Let it stand for 5 minutes.
  3. Using a chef’s knife, cut the squash in half, lengthwise.
  4. Remove and discard seeds using an ice cream scoop.
  5. Use a fork to scrape the sides of the squash, creating long strands.
  6. Place strands in a large bowl and mix in your favorite ingredients—we like to use Parmesan, mozzarella, chopped tomatoes and herbs.
  7. Place the mixture back in one of the shell halves and pop it back in the microwave for 2 minutes, or until the cheese is nicely melted.
